Restaurateur Max Chodrow is bringing his hip Jean’s bistro to the Hamptons

New York’s hip Jean’s restaurant is getting a new address out East.

Restaurateur Max Chodrow is taking over Hamptons classic, Old Stove Pub in Sagaponack, Page Six has learned. And unlike most NYC staples, who pack up their menus following the summer season, it won’t be a pop up. Chodrow says they’re there to stay.

“We don’t really love the Montauk process of doing things, where you run something temporary. We want to build something for the community and to be there for a really long time,” he said.

“We’re in it for long term and plan to be open year-round,” he added.

Chodrow opened the trendy bistro in the old Butter space on Lafayette in New York’s Noho neighborhood back in 2023.

The buzzy spot was his first hospitality venture. It functions not only as a restaurant that pulls in the cool crowd, but a nightclub that has brought out stars like Busta Rhymes, Bad Bunny, Parker Posey, Erykah Badu, and New York nightlife legends like Amanda Lepore and Dianne Brill.

The restaurant has also been known to host an “SNL” afterparty or two, but don’t expect the Sagaponack location to embody the party energy of the city.

“It’s really about farm to table, and celebrating local fisherman and farms out there,” Chodrow said.

The menu will be slightly different than their New York flagship, offering more seafood and local products, Chrodrow said.

The area holds sentimental value. He he grew up going there with his dad, famed restaurateur Jeffrey Chodrow. “It’s the most charming thing out there. It’s this hidden little thing, farmland that hasn’t really gotten the love it needed over the last few years. It’s an incredible opportunity,” he said.

He added, “So much of the impetutus for pursuing this location was to be amongst the Sagaponack farm land and farming community.”

Jean’s will open this summer for guest dinners, special events and private parties within the community before undergoing renovations in the fall. Chodrow described the summer opening as “more of a get to know you.”

We hear invites have already gone out for a July 4th celebration.
